This Chicken Tikka Masala recipe is super easy and delivers authentic curry-house flavours.

Ingredients

With Boom's Karma Korma Curry Kit

Skip to prep for the curry. 

    Without Boom's Tikka Tarka Masala Curry Kit 

    If you don't have our kit you will need to prepare the following:

    • Tikka spice mix - 3tsps. Ours contains a blend of:
      • beetroot,
      • chilli powder,
      • coriander powder
      • cumin,
      • garlic powder,
      • fenugreek,
      • ginger powder,
      • paprika,
      • ginger powder,
      • mango powder,
      • dried mint
      • 35g of coconut flour
        • Onion base gravy. Our Boom base contains:
          • Onion

          • Tomato
          • Garlic
          • Boom's Garam masala
          • Coriander leaf

        Prep for the curry

          • 3 tbsp of veg oil
          • 2/3 large chicken breasts
          • 2 garlic cloves
          • 100ml quality natural yogurt (low fat just isn't the same!)
          • A squeeze of lemon juice
          • 1tbsp of tomato ketchup 
          • 1 tbsp of tomato puree 
          • Sugar to taste - we recommend 1-2 tbsp for restaurant flavour
          • 1/2 a tsp salt
          • Small handful of fresh coriander (optional)
          • Something to serve it with (rice/naan/chapati) 

           

          Method 

          Slow or Fast Method?

          Slow: For a deeper, richer flavour marinate your chicken for a few hours or even overnight in the fridge after step 3.

          Fast: If you want to eat ASAP, crank the oven up to 180°C/350°F and continue. 

          For the Tikka Marinade

          1. Cut 2 or 3 large chicken breasts into bite sized chunks and place into a bowl.

          2. In the same bowl add:

          • 1x Boom Tikka Spice Mix (you get two in each Tikka Tarka Masala kit, use one now but save one to make the sauce later).
          • 2tbsp of natural yoghurt.
          • 2tbsp of lemon juice (or juice of a whole lemon).

          3. Peel and crush 2 garlic cloves -

          • mix half the crushed garlic into the chicken marinade bowl above.
          • Keep the other half back for your curry sauce. 

          4. This is the fork in the road for: 

          • Slow method - for a deeper richer flavour, leave the chicken to marinate (cover the chicken and place in the fridge).
          • Fast method - place chicken chunks on an oiled baking tray and into the oven.

          Tip: if you have skewers, skewer your chicken kebab style for a more authentic experience. if your skewers are wooden don't forget to wet them first to stop them burning.

           

          Making tikka sauce

          5. Dilute Boom Base with 250ml of boiling water, stir and leave. This is also a good time to get your rice on.

          6. Add 3 tbsp veg oil to deep frying pan or wok and turn heat on hob to med/high.

          7. Add  the remaining 1 crushed garlic clove.

          8. Add 1 tbsp tomato puree. 

          9. Add Boom Tikka Spice Mix, a tiny splash of Boom Base and fry for 30 seconds.

          10. Pour in the rest of the Boom Base™ and continue cooking until the sauce has reduced and thickened up nicely (approx. 5 mins).

           

          Tip: Smiley pan test - if you can draw a smiley in your sauce - i.e. it takes a moment for the sauce to flow back together and cover the pan then you're curry sauce is good and ready for the next step.

          11. reduce the heat to low and add:

          • Boom Coconut. 🥥 
          • 5 tbsp good quality natural yogurt.
          • 1 tbsp tomato ketchup.
          • the cooked chicken from the oven.

          12. Simmer for a couple of mins, then turn off the heat.

          13. Add a large handful of freshly chopped coriander before serving with rice/naan/chapati. Boom. 💥
